Salad with Diced Chorizo

Want a salad with added flavour? Sprinkle on some crispy diced chorizo to top things off

5 mins

9 mins

  • 70g Footsteps® Diced Chorizo
  • 1 avocado,
  • 6 baby plum tomatoes
  • 100g babyleaf salad
  • 1 ciabatta rolls
  • 1tbsp olive oil
  • Salt and Pepper
  • Lemon juice

  1. Heat the frying pan over a medium heat, then add the oil
  2. Tear the ciabatta into small chunks and add to the frying pan
  3. Cook for 3-4 mins until crispy
  4. Remove from the pan and drain
  5. Add the diced chorizo pieces to the pan and cook for 4-5 mins, stirring so as not to let them burn, until crispy
  6. Take out the pain with a slotted spoon and allow to drain
  7. Between two bowls add the salad, scatter over the tomatoes and ciabatta chunks
  8. Cut the avocado in half, remove the stone, then cut each half into cubes
  9. Add to the salad, then top with the chorizo pieces
  10. Drizzle with a little lemon juice, to stop the avocado from browning
